Pumpkin Chocolate Chip Cookies

For the few that asked:

FYI: These are very light and fluffy. Almost muffin like, but still delicious! This makes a TON of cookies so I hope you are hungry or have friends who like to eat!

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin puree
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups (12-ounce bag) milk chocolate chips, not semisweet
  • Nonstick cooking spray or parchment paper

Heat the oven to 350 degrees F. Spray cookie sheets with nonstick spray or line them with parchment paper.

Using a mixer, beat the butter until smooth. Beat in the white and brown sugars, a little at a time, until the mixture is light and fluffy. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly beat the flour mixture into the batter in thirds. Stir in the chips. Scoop the cookie dough by heaping tablespoons onto the prepared cookie sheets and bake for 15 to 20 minutes, or until the cookies are browned around the edges. Remove the cookie sheets from the oven and let them rest for 2 minutes. Take the cookies off with a spatula and cool them on wire racks.

i digress once more.

for the past 4+ months, i have been enveloped in the most wonderfulbeautifulaweinspiringbreathtakingsupportive love i ever imagined to exist.

in finding and falling in love with you, i found my other half. i began to reach my full potential. i realized what is important in life — loving, living, laughing, being happy, exploring, learning. i’ve learned what to let go of. i’ve learned to care for someone more than myself. i’ve learned the perfect hangover remedy. i’ve napped and laughed and lived and loved more in the past 4 months than i have in the past 18 and 3/4 years.

you awoke something in me i didn’t even know existed. you saw through immensely dense walls — you did more than that, you cared enough to get rid of them. you’ve spent more time with me than anyone i know. i have never doubted you or us or anything since you came into my life.


if i had met you at any other time, this would have never happened. everything in our worlds was happening in such a way that when we met… our cosmos collided and created a lovely universe. everything happened in a wonderful, glorious, beautiful big bang. you and i discovered — no, we experienced serendipity. our love is the gorgeous by-product of a truly serendipitous moment. our relationship, the greatest thing to ever come out of karaoke night in plant city at applebee’s.  

thank you for going with him that night. thank you for wearing your pink floyd shirt and your lazy boots and dancing around my “straight” friend while he sang a song by the bloodhound gang. thank you for talking to me on facebook all of those nights. thank you for giving me your phone number so we could text. thank you for walking around wal-mart with me at all hours of the night. thank you for indulging all of my silly whims and for being everything i have ever wanted… and even what i was hesitant to ask for, for fear that it may be too much.
